J.P. Wiser’s 18 Year Old is a beautiful blend of 100% soft double column distilled corn whisky, aged in used Canadian whisky casks, which emphasizes grain and yeast characteristics, such as mature oak, autumn florals, spice and rich caramel. Our distillery is in Windsor, Ontario, the most southerly point of Canada. Our 16 non-temperature-controlled warehouses hold 1.6 million barrels of whisky and we lose 3% every year to the “angels’ share”. Our evaporation rate is subject to climate, temperature, and relative humidity as the barrel breathes in and out throughout the maturation process. Our warehouses, located in Pike Creek, are at the most southern tip of Canada where temperatures reach up to 35°C (95°F) in the summer months and as low as - 40°C (-40°F) in the winter months. We generally lose about 48,000 barrels each year to the whisky angels. Southern Ontario’s fluctuating climate provides a special aging environment that promotes the formation of ethyl acetate, delivering delicious, unique notes of green apple, commonly disguised in other whiskies of similar age.
